Corned Beef And Cabbagein the Crock Pot


 



 It is that time of year again, St. Patrick's Day. Tomorrow is the official feast of St. Patrick. Many communities were starting their celebrations on Saturday. One way my family celebrates is by having corned beef and cabbage for dinner. I go back and forth between cooking on the stove top, in the oven and the crock pot. Here is the recipe for the crock pot.

Corned Beef and Cabbage in the Slow Cooker
1) 3-4 pound beef brisket
2) spice pack
3) 2 tablespoons apple cider vinegar
4) 4-5 carrots in small chunks
5) 4 potatoes cut in medium size pieces
6) cabbage cut in quartered sections
7) 1-2 onions cut in quarters
8) 4-6 cups water
9) one bottle of beer *optional If you use make sure to cut back on water using 3-4 cups.

Put all your veggies except cabbage in slow cooker. Put the brisket on top of them, fat side up. Mix water, spice pack, and vinegar together. Pour over brisket and veggies. If you are using beer pour that over now. Cook for four hours. Then add the cabbage and cook for 1-2 hours more until cabbage is softened. Enjoy!
