Easy Chicken Recipe: Coronation Chicken

A great recipe for leftover chicken

Do you know the history behind why the recipe for Coronation Chicken was invented?
Chef Rosemary Hume was retained to oversee the banquet following the coronation of Queen Elizabeth II in 1953 and Florist Constance Spry suggested a recipe that contained cold chicken with a curry cream sauce. This recipe became known as Coronation Chicken.
It is thought that the inspiration for the suggestion came from a dish known as Jubilee Chicken, which was prepared for the Silver Jubilee celebrations of Queen Elizabeth's grandfather, George V who, in 1935, was commemorating 25 years as King. This dish mixed chicken with mayonnaise and curry and today, it is the curry and mayonnaise version of the dish which is generally referred to as Coronation Chicken

Easy leftover chicken recipe

All you need is:
Some cooked chicken, it can be left over from roast chicken, baked chicken legs or thighs, chicken breasts
Mayonnaise - the amount depends how much chicken you have
Curry powder - use 1 teaspoon of medium curry powder for each tablespoon of mayonnaise
Note: The curry flavor develops more quickly if it is melted into a smooth paste with some warm water

All you do is:
Mix the curry paste into the mayonnaise
Mix in the chicken
Note: the curry flavor develops the longer the mayonnaise is left before adding the chicken

Variation
If you like raisins or sultanas you can also add these to the curry mayonnaise before you cover the chicken

Serving Suggestions for Coronation Chicken

Coronation Chicken can be served as an appetizer or a main meal

Coronation Chicken can be served:

with cold boiled rice, just mix it in

with cold, cooked pasta to make a pasta salad

with a baked potato

as a dip with chips (we call them crisps in the UK), corn chips, sliced pitta bread or sliced raw veg such as carrots or celery

Chicken with Mushroom Sauce

Another easy left over chicken recipe

You can use any left over chicken for this recipe. However, because this recipe requires you to reheat the meat, it is very important that you heat it thoroughly.
To reheat chicken and prevent it from drying out, simply wrap the chicken in foil, put in an oven proof dish and place in a pre-heated oven at 350 degrees F (180 C or gas mark 4) for at least 30 minutes.
Make sure the chicken is piping hot and heated right through.

Serve the sauce over the chicken with vegetables of your choice or plain, boiled rice.
